Chocolate cupcakes with cream and strawberries

  • 10 tablespoons of extra virgin olive oil. A more dietary version can replace - in part or totally - extra virgin olive oil with an apple concentrate.
  • 2 tablespoons of lemon juice
  • 2 teaspoons of vanilla
  • 2 cups of cold water

  • 2 cups of diced fresh strawberries
  • 1/2 cup of white sugar
  • 2 tablespoons of corn starch
  • whipping cream for decoration

Chocolate cream and strawberry cupcakes, the procedure

  1. In a bowl, place all the solid ingredients indicated in the "ingredients for the cupcakes". Mix well. Compose the classic volcano and add all the liquid ingredients and keep stirring until you get a lump-free mixture.
  2. Take some non-stick molds and fill them with the mixture just obtained. Bake in a preheated oven at 180 ° C for 20 minutes.
  3. While I cupcakes cook the strawberry filling: in a pan, over low heat, stir continuously the strawberries. When they have softened, add the sugar and corn starch. Keep stirring until they thicken.
  4. Whip the cream and place it in the fridge.
  5. When the cupcakes are cooked, let them heat up and fill them with the strawberry filling just as shown in our PHOTO GALLERY.
  6. Decorate with whipped cream.
