Ingredients for Mussels & Beer (two people)
500g (at least) of fresh mussels
1 clove of garlic
1 glass of lager beer
Extra virgin olive oil
1 tablespoon of cornstarch
Clean the mussels well before cooking them, remove any encrustations and beards. You can ask a good fish shop to do these operations for you, at no additional cost. Peel and finely slice the shallot (more intense than the onion). In a large pan, put the whole clove of garlic crushed with the flat part of the knife, the chilli pepper with two tablespoons of extra virgin olive oil and sauté over low heat for a few minutes. Add the cleaned mussels and raise the heat to maximum, pour in the beer and let it cook until the mussels have opened. Remove the mussels with a slotted spoon and arrange them in a single serving dish (a single dish is enough for both) and let the cooking juices reduce for a few more minutes; add the cornstarch and mix well for a few minutes, then pour over the mussels and serve. Complete with a few sprigs of fresh parsley and enjoy immediately with your hands. To organize yourself better, you can also prepare everything a little earlier and let the mussels cool; instead heat the cooking juices before pouring it and just before serving.
