A handful of pine nuts
A handful of almonds
A handful of green olives

How to make rice salad, the preparation

  1. Put the rice to boil in salted water and when cooking, drain and pass the rice under cold water to stop cooking
  2. Pour the rice into a very large salad bowl
  3. In the meantime, clean the carrots, cut them into small pieces and put them to boil in salted water
  4. Do the same with the potatoes and courgettes
  5. When each vegetable is cooked, drain and pour the courgettes into a bowl and the potatoes and carrots in another
  6. Take the boiled courgettes, mix them in a mixer until you get a creamy mixture, adding the raisins, pine nuts and almonds
  7. Pour the freshly made cream into a bowl and set aside
  8. Take the previously boiled rice and add the diced potatoes and carrots, the corn, the pitted green olives, the chopped tofu, the chopped tomatoes and mix
  9. Finally add the zucchini cream set aside in therice salad and mix until you get a homogeneous mixture
  10. Put therice saladin the fridge and serve after at least two hours
  11. Decorate with a few basil leaves
