Vegetable meatballs

Vegetable meatballs, the ingredients for 4 people
2 courgettes
1 bell pepper
2 carrots
100 grams of grated Parmesan
200 grams of cottage cheese
A sprig of parsley
2 eggs
4 tablespoons of bechamel
Bread crumbs
Salt and pepper

Vegetable meatballs, the preparation

  1. Peel the carrots, grate them finely then pour them into a large bowl
  2. Wash the courgettes well and grate them too, then pour them into the bowl together with the carrots
  3. Wash the pepper thoroughly, remove the seeds and grate it, then add it together with the other vegetables
  4. In another bowl, beat the eggs well, add the finely chopped parsley, pepper and a pinch of salt.
  5. Pour the beaten eggs into the bowl containing the grated vegetables and mix well
  6. Add the bechamel, ricotta and cheese and mix
  7. Finally add the breadcrumbs just enough to make a thick and compact mixture, a pinch of salt and mix all the ingredients
  8. Take a handful of the mixture and form a flattened ball and proceed until the dough is complete
  9. Put the Vegetable meatballs on a greased baking sheet and cook in a preheated oven at 180 degrees for 30 minutes, remembering to turn them at least once halfway through cooking
  10. Serve hot or warm
