For a more substantial dish you can point to the omelette withpotato and carrot peels. Each serving of this dish provides approximately 251 kcal. Let's see the ingredients:
- 6 eggs
- the skin of 4 potatoes better if from your own garden
- the skin of 6 carrots (or two finely chopped whole carrots)
- 1 small onion
- 6 tablespoons of EVO oil
- 125 grams of fresh ricotta
To prepare the peels, dip them in water with a spoonful of baking soda and let them rest for a few minutes. Do the same thing with carrots. With the crescent, cut both peels of potatoesthat ofcarrots. Chop the onion. Chop the parsley.
Heat a non-stick pan over low heat with a drizzle of oil. Brown the onion and add the skins making them cook covered for about 10 minutes. During cooking, add a cup of water. In a deep dish, beat the eggs and add parsley, salt and pepper. In a bowl, dilute the ricotta with a few tablespoons of water and then add it to the egg. Pour the mixture (eggs plus ricotta) into the pan where you are cooking thepeels and mix everything. Halfway through cooking, remember to turn the omelette.
