In the West it is not yet particularly known, its origins are to be found in the Caucasus but the word Kefir comes from the Turkish keyif which means delight.

There are various ways to prepare this food and sometimes the fermentation it can cause a small CO2 and alcohol content to be created, both due to the fermentation processes of yeasts. To produce kefir in general, fresh milk is used which can be either sheep, goat or cow, and then serve the ferments or granules of chefir, formed by a polysaccharide called kefiran which hosts colonies of mainly mesophilic and yeast bacteria in symbiotic association.

It is not necessary to feel bad to get to take on lactic ferments, we do not expect to have the intestines not in place to intervene but let's take them at the table in preventive terms in order to keep our bacterial flora in balance.
