How to make pasta and cauliflower

  1. Take the bacon and cut it into cubes: if you are really lazy, you can buy it at the supermarket already cut to this size. In any case, put the cubes in a saucepan, and let them brown with the extra virgin olive oil and the 2 cloves of garlic, over low heat.
  2. Once the bacon is golden brown, remove the garlic from the saucepan and add the cherry tomatoes cut in half. Continue to brown for a few minutes and then add the 600 grams of cauliflower which, previously, you have taken care to cut into florets. Mix everything with particular care.
  3. While cooking, dilute the oil with a few ladles of hot water. Then add the parmesan crust cut into small pieces. Season with salt and cover the saucepan with the lid, let it evaporate over low heat for 30 minutes.
  4. Then extend again with boiling water and lower the pasta, stirring constantly and, if you deem it necessary, adding more boiling water.
  5. Then bring the pasta to cooking (remember it must be al dente!) Turn off the heat and let it rest for a few minutes in the saucepan before serving.
  6. Add the grated cheese, mix and serve.
